Love and Hate

Katie Bigs ( That is what we call the Bigney family in this house) tagged me today for Love Hate
so here are the things I love and hate about today.

Love:
1- Love that I was able to pick up another shift at Janesville after the people at Susanville filed a grievance on me for working there cause I am taking away hours from them and apparently that is not legal since I am not a PTF (part time flex able employee). Yeah talk about drama and the girl who filed is out for the next 6 weeks having surgery. Not like she was going to be working. So now others will have to miss out on taking their vacations like planned.
2- Love that Claira and I made Upside Down German Chocolate Cake. YUMMY
3- Love that I took a 2 hour nap. After all the doctor told me if I am tired I need to take a nap or it will just make my symptoms worse - who would have thought Ebstienbar was a life long issue
4- Love that the Trani is in the Honda
5- Love that the kids are being nice to each other

Hate:
1- I hate that it is HOT in my "scraproom/ office" who wants to hang out on the puter in a hot room
2- I hate that even though the Trani is in the Honda it is still not perfect - it sounds like a stinking rice rocket and it does not go over 65 ( which is fine for grandpa driver Eddie but if you need to drive a little faster to get out of a emergency type situation this does not work) - will be calling my mechanic - who is by the way not the person who "fixed"my trani lets hope it is not an issue with the Trani cause we can not go through that saga again!!!!
3- I hate that I have no idea what type of pay check we will be getting next month - or any other month after that. I can not plan. Like should I buy those peaches that are a really good price or do I need to save my money so that I can pay the bills next month....
4- I hate that no one cleans around here but me. Eddie will clean once in a while but I am anal and want everyone to do there chores everyday with out me having to gripe about them not being done.
5- I hate.....????? I don't know..... well my mom can fill this one in for me ....

Berry Cinnamon Rolls with Lemon Cream Cheese Icing

Berry Cinnamon Rolls with Lemon Cream Cheese Icing

INGREDIENTS:
For berry cinnamon rolls:
1/2 c warm water
2 rounded tsp of yeast
1/2 c butter
2 c THRIVE Powdered Milk - ( I just used regular milk)
3/4 c THRIVE White Sugar (with just a dash extra)
2 THRIVE Whole Eggs, reconstituted
1 tsp THRIVE Iodized Salt
6 1/2 c THRIVE Flour (White Flour, Whole Wheat Flour, or half of each)
2-3 c THRIVE Freeze Dried berries - any combination of blueberries, blackberries, strawberries, and raspberries
1/2 c THRIVE Brown Sugar
1-2 tsp cinnamon

For lemon cream cheese icing:
1/4 c softened butter
1/4 c softened cream cheese
2-3 tsp THRIVE Powdered Milk, reconstituted
1 tsp vanilla
zest of one lemon
2-4 cups powdered sugar
PREPARATION:
*Combine water, yeast, and a dash of sugar in a small bowl.
*In a small saucepan, melt butter. Add milk and heat through.
*In a large bowl, mix sugar, eggs, and salt. Add milk mixture to sugar mixture. Mix together with a large spoon. Make sure this mixture is not too hot so it won't kill the yeast, then add in the risen yeast mixture.
*Add 4 c flour to this mixture and gently stir. Beat with a hand mixer for one minute. Add remaining 2 1/2 c flour and stir until remaining flour is just moistened; do not over mix.
*Let rise once and gently pull away from the sides. Don't punch the dough down. Let rise again until doubled in size. At this point, punch the dough down.
*Roll dough out to 24" x 10-12". Spread with melted butter and sprinkle with sugar and cinnamon. Top with dried berries.
*Preheat oven to 350 degrees. Roll dough up as with jellyrolls and cut into 24 1" discs, placing each on a large cookie sheet that has been greased.
*Let rise again, then bake at 350 degrees for 17-20 minutes or until just starting to turn golden brown.
Top with any desired icing, or use with the following instructions for Lemon Cream Cheese Icing:
*Blend butter and cream cheese together, then add milk, vanilla, and lemon zest.
*Whip in the powdered sugar, adding more for thicker icing and less for a drizzly consistency. More milk may be added if icing becomes too thick.

Cinnamon Rolls

Today we made Cinnamon Rolls from scratch - yes you read that right - scratch I was thinking if we made the rolls tonight then the kids could warm them just a little and frost them in the morning for Eddie for fathers day. ( That is nice of me to think of him huh)

So I made one batch of half white -half wheat cinnamon rolls. I had quite a bit of dough left over so I figured I would just make rolls with them rather than have sugar treats sitting around for all of us to eat. So I am shaping the rolls into balls and Claira comes in the kitchen and starts laughing at me, cause I was not doing it like her dad. Yes Eddie makes good rolls and they actually look good too. Mine are very good and they look OK but who cares they taste good and they are not going to be shared with anyone but us. She just kept laughing and laughing cause I was not shaping them right. WHATEVER

Once the cinnamon rolls came out of the oven we let them cool just a bit and then I let the kids have the end pieces - we had to taste them before we give them to Eddie in the morning what if they are gross? Dallen said they were D-lish and Claira said they were pretty good. I liked them. Now tomorrow will be the test. The rolls are now out of the oven too I had one and I think they are dang good you can not even tell they are half wheat!
